Our key business practices include an extensive and assuring list of operating procedures that are followed at each outlet and the central kitchen of Shawafel™. Our ‘first-in, first-out’ (FIFO) food management method has 16 quality checks to ensure food safety standards and freshness across the stages of purchase, storing, preparation to selling. Following protocols of safe cold storage all Meat and poultry is stored between 0°C -2°C, Dairy products between 3°C -4°C and Fruits and vegetables between 4°C -7°C, allowing us to adhere to all the Food Safety and Standards Authority of India (FSSAI)regulations and procedures to ensure best possible food management across the chain at Shawafel™.
Our standardized method of Inventory management ensure that the dry food store is airy, well lit, clean, protected from pests and excessive moisture. All whole cereal grains, pulses, flour, sugar, oil, canned foods, etc. are stored between 15°C -21°C and a relative humidity of 50 to 60 percent.
Each store of Shawafel is equipped with well designed kitchens and service layouts that ensure a standardized, hygienic and fast preparation process. Each personnel handling food items and consumables is equipped with intelliMED black nitrile disposable gloves that are powder free for everyday usage, with their heads covered in clinical grade hair-net protection gear . The hygiene and food safety measure allow us to maintain good hygiene and safety throughout the process of procuring, storing, preparing and selling our menu.
